Porcini Mushroom Dust - for lamb, duck, beef.

2007 Shake Ridge Zinfandel

  • 1/2 cup of dried porcini mushrooms
  • 1 teaspoon of garlic powder
  • 1 teaspoon white pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • black salt to taste

Grind muchrooms in a coffee grinder. Transfer into a small bowl and add rest of ingredients to mushroom dust. Sprinkle generous amounts onto a sheet pan and drag lamb chops, duck breast or beef steak. Grill until desired doneness.
